  • 2 kg Beef or Chicken Bones
  • 1/4 cup Apple Cider Vinegar
  • 2 Carrots chopped
  • 2 Celery Stalks chopped
  • 1 Large Onion quartered
  • 1 Garlic Bulb halved horizontally
  • 1 Teaspoon Black Peppercorns
  • A handful of fresh Parsley
  • 2 Bay Leaves
  • Water to cover

Instructions
 

  • As simple as pie, start by placing your chosen bones into a large stockpot. Roasting the bones before isn’t strictly necessary but it can enhance the broth’s flavor.
  • Add apple cider vinegar and let’s get this party started, the vinegar helps to extract nutrients from the bones. Allow them a cozy 30 minutes to sit with the vinegar.
  • Now, add the chopped carrots, celery stalks, quartered onion, halved garlic bulb, and peppercorns into the pot.
  • Pour in enough water to cover all the ingredients.
  • After bringing the mix to a boil, reduce the heat and let it simmer away. You’re looking at a slow and low cooking session, for about 24-48 hours. Patience, my friend, is the secret ingredient here.
  • Throughout cooking, skim off any impurities that float to the top. Knife through the monotony with periodic checks.
  • Towards the end of the cooking time, adorn your concoction with the Parsley and Bay leaves. Let it simmer for another 30 minutes.
  • Once satisfied with the taste, strain your broth into a large bowl. You can cool and store it in the fridge.
